Prohibition-esque bar with a focus on boozy drinks and American comfort food
A familiar story, this unit had been a troubled site for over a decade. The location and unique building layout meant that a destination bar was needed. We would have to create a whole new circuit.
I had been looking for a site for my prohibition conept for around 18 months, and this was one of several sites we viewed.
Despite being in a terrible state of repair, the fabric of the building was sound, and meant we really could start with a blank canvas.
We travelled to the USA – namely New York and Chicago, where we met with farmers, restauranteurs and bartenders to really get a flavour of what these cities had to offer, both food and drink-wise.
Scotch & Rye wasn’t to be a theme pub – it was to be an authentic taste of the States, and a real look back to what the drinks scene would have been like during the 20’3 & 30’s.
Even elements of the decor were sourced from specialist dealers to really gild that authenticity.
What we have now is an award-winning bar and eatery that sits pride of place in Inverness centre, and has an offer that is hard to beat!
